2010 Michelin Guide

It is with great excitement that the news reached us: Le Ranquet retains its Michelin Star in 2010!

It is a fantastic reward for the Chef Olivier Gulizzi who has demonstrated in just a few months the quality of his cuisine and the delicacy of his dishes. We express our gratitude to him as well as to his entire team for their invaluable contribution.

We receive this Michelin Star with great humility, as an encouragement to keep up the good work towards excellence.

Even if our head is now somewhat with the stars, we will keep our feet firmly on earth to always honor the trust of our customers and ensure their full satisfaction.

The new menu at the Restaurant.

With the approching spring, chef Olivier Gulizzi is delighted to present his new creations of subtle flavours. To tempt you a bit here are a few of these new dishes.

From the sea:

Poached and Roasted Fish with Sea Urchins Cream,
Baby Leeks and Sea Foam

From the mainland:

Duck Breast Medallion with Pan-fried Foie Gras
Parsnip Puree and Roasted Orange Jus


Chef Olivier Gulizzi have also added a few of his favorite dishes to the a la carte selection:

News from the Garden

This time of the year is exciting for Chef Olivier Gulizzi and our gardener Jack Savanier. Now is the time for planting and preparing the fruits, vegetables and herbs that will highlight each of the delicate dishes for next seasons, as well the flowers that will enlighten our park and gardens.

More than 100 different varieties of vegetables and herbs have been put into seeding, to be planted out shortly. Of these are of course some traditional varieties, but also rare crops have been added for their qualities and particularly for their flavor. Among these species are:

Tomato Morelle de Balbis: also known as Litchi Tomato, it is considered as the ancestor of the tomato. The thorny plant grows sweet and acidulous fruits, as little as cherries

Stevia Rebaudiana or sugar leaf: originated in South America, it has always been known by Native Americans. This plant has tremendous virtues and makes any bitter drink more enjoyable.

Glacier lettuce: a "forgotten vegetable" giving dishes added enjoyment by its frosted appearance, its slightly acidic flavor and crunchy texture.

Pholiote du Peuplier - the Poplar mushroom offers crunchy flesh and delicate taste with a hint of nuts.

By now, the greenhouses of Le Ranquet are full to the brim with all these delicious varieties of vegetables and herbs, which will accompany your meals and enhance your experience.
